I was wondering what 17x 7.5 with 40 offset would be like?

I'm not after hella flush, just after a useable aftermarket wheel for now.

Can't say for sure, but it'd probably look terrible in the back.

Am I correct in saying that the difference from the a 40+ and 35+ offset wheel is only 5mm from the wheel well. (trying to figure out how much further they will stick in or out.

Yeah pretty much. It's still a notable difference. My wheels are 17x8 +35. See below. I had stretched tyres on back then. Running meatier tyres now, so they poke out a little more.
